- frozen spinach leaves 300 gr
- ricotta or cottage cheese 200 gr
- mozzarella 100 gr
- Parmesan 40 gr
- olive oil 2 tbsp
- eggs 2 pcs.
- dried garlic 1 tsp
- dried oregano 1-2 tsp
- 1/3 tsp chili flakes
- salt 1 tsp
- flour 2 cups + to sprinkle
- baking powder 2 tsp

Defrost the spinach, squeeze a little and mix in one bowl with ricotta, mozzarella, oregano, dried garlic, chili flakes, salt and egg yolk and 1 tbsp. olive oil.
Add baking powder, salt to flour. Mix. Add 1 tbsp. olive oil, mix. Knead the dough gradually adding warm water. Lay the dough on a flour-sprinkled surface. Knead a few minutes. Roll into sausage and cut into 4 parts.
Roll out each of the parts with a rolling pin. Mix the egg with two tablespoons of water. Lubricate the edges. Put the mixture with spinach on one half, cover with the second half of the dough and pinch the edges.
Lubricate the top with a mixture of eggs and water. use a sharp knife to make several long cuts on top.
Preheat the oven to 260 C, bake for 8 minutes. Remove from the oven. Grease again with a mixture of eggs and water, sprinkle with parmesan. Bake in the oven for 7 minutes. Allow to cool slightly.
